Benefits of Using Honey as Sugar Alternative in Food

Cooking with honey is a very good alternative to common white grain sugar and brown sugar. It is an easy way to reduce caloric consumption and get the desired levels of sweetness in foods and is also provide the antioxidant boost in the dishes.

How Do Bees Make Honey?

It turns out that making honey is such a highly industrious process, it makes building the pyramids a snap. To make a single pound of honey, bees collectively travel fifty thousand miles. There is an enzyme called invertase in bee's mouth that converts the sucrose in flower into two simpler sugars called glucose and fructose.

It is the gluconic acid that turns honey into a highly acidic medium that hinders the growth of bacteria and fungi. It takes eight bees serving full time for their lifetimes to make a single teaspoon of honey!

If you opt to replace honey for sugar in certain recipes, there are few simple tips to achieve the same levels of sweetness and moist texture in the foods you bake.

Temperature Factor

Honey heats up faster than sugar. So, when you are cooking with honey in dishes or baking, you want to reduce the temperature by approximately 25 degrees F of the dishes you are making.

Quality of the Honey Food

Want to attain a mellower, darker, sweeter, moistened flavor and texture? Use darker honey when you are substituting honey for sugar in your dishes. For a light flavor in the cooked goods, go with a lighter colored honey to give a milder flavor and less thick texture.

Quantity with Honey

Do not use the same amount of honey as you would use sugar in the recipes you are baking. If the recipe calls for one cup of sugar and you are substituting honey then recipe will require you to make adjustments in 2/3 to 3/4 the amount of honey to attain the desired level of sweetness as sugar.

Use as Ingredients

It is recommended to reduce the other liquids in a recipe (milk, water, etc) in the food by up to 1/4 quantity of honey because it is a natural lubricant it will make up for the 1/4 loss in moisture from other moist ingredients.

Using honey is going to allow you to achieve the same levels of sweetness, texture, and provides the extra antioxidant benefit, along with low-calorie dishes when you substitute honey for sugar.
